Extra virgin olive oil in human health: an exploratory analysis of consumer behavior

Abstract:Italian extra virgin olive oil is a product with multiple quality characteristics recognized worldwide; in fact, it is considered one of the pillar foods of the Mediterranean Diet. In societies with high per capita income, consumers are particularly inclined to purchase quality agri-food products, given the greater availability of income that causes a shift in the demand curve (or increase in the quantity demanded). In this context agri-food companies must provide to meet these new consumer needs. This paper aims to analyze aspects related to the consumption of quality extra virgin olive oil (PGI, PDO) with a focus on sustainable certification. The results show that, through a questionnaire administered to 502 consumers, participants are interested in quality, raw material origin, and sustainable certifications.
