Abstract:

Raw milk from different dairy farms of different size and from private milk producers valorised on four markets (A, B, C and D) from a microbiological point of view does not meet European Council standards and regulations regarding the number of somatic cells and the total number of mesophilic aerobic germs. The lowest load of somatic cells (450/ml) and the total number of mesophilic aerobic germs (200 ufc/ml, the double of the standard number) were in the samples from market B, which shows that milk producers do not observe hygiene standards regarding the milking technology and market improper raw milk.

Keywords:

Raw milk, somatic cells, mesophilic aerobic germs
