Abstract:

Mechanical properties of two almond varieties, Shahrud 12 and Mama’e, were obtained for determining the breakage force, breakage energy, required power for breakage, almond’s disfiguration at the point of rupture, toughness, and softness while being loaded between two parallel plates. These experiments were carried out at three loading speeds (50, 200 and 400 mm/min), two loading planes, and two kernel sizes (small and large). Also physical properties of varieties such as length, width, thickness, geometric average, sphericity, volume and mass, were obtained. Results showed that loading speed against force, energy and required power for breakage, disfiguration at rupture point, toughness, and softness were significant at 1% level of probability. Findings showed that by increasing loading speed, breakage force and toughness decrease and disfiguration at rupture point increases. Also consumed energy for almond’s breakage at loading from above with average of 352.26 mJ was 47% lower than lateral loading with average of 520.47 mJ.
