Abstract:

In developing countries hidden hunger or micronutrient deficiency has become a major crisis among children between the age 6 months to 3 years. The importance of good feeding practices such as exclusive breast feeding and timely complementary feeding initiation has become crucial. By incorporating nutrient rich locally available food ingredients makes it affordable for every section of the population to combat the risk of micronutrient deficiencies. The study focused to develop a complementary feeding mix suitable for infants and toddlers (6 months to 3 years) from locally available raw materials. The basic mix with three different proportions A, B, C (A- 40:20:20:20,  B- 20:40:20:20, C-25:25:25:25) were formulated with germinated ragi flour, sweet potato flour, roasted Bengal gram dal flour and roasted sago flour. The processing methods involved in formulating weaning mix were soaking, germination, drying, roasting which enhanced the bioavailability of the nutrients. Nutrient analysis of the basic mix of three different proportions was analysed using nutrical software. Nutrient computation was done for each recipe’s nutritive value compared to RDA as per ICMR 2020 for both infants (6-12 months) and toddlers (1-3 years). The three mixes were found to be high in carbohydrate, protein, dietary fibre, calcium, iron, zinc, magnesium, thiamine (B1) and was a source of riboflavin, niacin, vitamin C, but was low in vitamin B6, vitamin A, sodium and fat. Even though all premixes were nutritionally adequate premix A was nutritionally superior in terms of nutrients.
