Formulation of finger millet based natural health mix and the evaluation of its nutritional status, phytochemical constituents and antioxidant potential

Abstract:

Healthy food habits and nutrient rich diet are necessary for healthy life. Nutritional status has great influence on body functions, growth and metabolism. The present study aimed to develop an innovative finger millet-based health mix, which not only provide nutrition but also confer medicinal properties. Finger millet, green gram, jackfruit seed, tamarind seed, pumpkin, beetroot and ginger were selected as raw materials and processed for preparing the mix. The processed ingredients were mixed in definite proportion to prepare the health mix combination. Nutritional quality, physical properties, phytochemical constituents and antioxidant properties of the mix were determined using standard biochemical methods.Biochemical analysis revealed that the mix has 59.13% carbohydrates, 12.13% proteins and 3.25% lipids. The beta-carotene, vitamin C and vitamin E contents of the mix (per 100 g) were 243.2 µg, 42.8 mg and 205 µg, respectively. The calcium and iron levels present in the mix were 209 mg and 7 mg respectively (per 100 g). The presence of bioactive compounds like flavonoids, phenolics and quinones indicates medicinal benefits. Antinutritional compounds like saponins, tannins and glycosides are absent in the mix. The mix has antioxidant potential also. The formulation is economically viable, confer medicinal and nutritional qualities. Besides the health mix formulation is natural, comprises of plant products only and is preservative free.
