Extraction and biological activity of total anthocyanins from sweet cherry cultivars as polyphenol oxidase inhibitors

Abstract:

Total anthocyanins were extracted from six sweet cherry cultivars grown in Sakarya, Turkey, and their inhibitory effects on the diphenolase activity of banana polyphenol oxidase (PPO) were evaluated. The PPO was purified from banana on an affinity gel comprised of Sepharose 4B-L-tyrosine-p-amino benzoic acid. The results showed that all extracted total anthocyanins inhibited the polyphenol oxidase enzyme activity. Among all cultivars,‘Lambert’ (IC50 = 195.06 µg/mL) was most active.
