An empirical study on consumer perception of food safety risk – An example of food additives

Abstract:Food safety is an issue receiving more concern and attention from consumers than before, as a series of food safety incidents occurred these years. In this issue, additive risk has been an outstanding concern. This paper is based on a questionnaire survey of 657 consumers from the three areas of Southern Jiangsu (Sunan), Middle Jiangsu (Suzhong) and Northern Jiangsu (Subei) where levels of economic development are of significant difference. The statistical analysis of this survey shows that the lower the level of economic development of an area is, the more attention consumers from this area pay to information on food safety, and they also tend to be more concerned about present condition of food safety. Food additives have become a factor that people worry about most.
