Comparison of two packaging conditions in preserving antioxidant activity of sweet persimmons

Abstract:

Two plastic films that were different in their gas permeability characteristics were used for packaging single fruit of the non-astringent persimmon. The two types of films consisted of low-density polyethylene (LDPE) and polypropylene/linear low-density polyethylene laminate (PP/LLDPE) and were 50 and 40 µm thick, respectively. These films created and maintained different internal atmospheres for the persimmon affecting the quality of preservation and retention of antioxidant activity of the fruit. The packages were stored at 0oC for 126 days and were taken out periodically to measure internal gas concentrations and attributes of fruit quality including antioxidant activity. The LDPE film packages had a 3-8% concentration of oxygen (O2) and a 3-7% concentration of carbon dioxide (CO2) inside the package, compared to the anoxic PP/LLDPE package with approximately 11% CO2. Furthermore, the LDPE packages were better in preserving ascorbic acid, total phenolic compounds and radical scavenging activities.
