HPLC assisted determination of phenolic compounds in two apple cultivars from Iran

Abstract:

HPLC analysis of phenolic compounds in peel of two apple cultivars, i.e. ‘Gala’ and ‘Zonouz’, was carried out during commercial harvest time. Based on the results obtained, there were quantitative differences between two cultivars regarding total phenolic index (TPI), the quantitative sum of identified phenolic compounds. Accordingly, ‘Gala’ had higher TPI value compared with ‘Zonouz’. The predominant phenolic compounds in ‘Gala’ peel were quercetin-3-galactoside and cyanidine-3-galactoside with 43.9 and 40.3% of total identified compounds, respectively. In comparison, cyanidine-3-galactoside and epicatechin were the major phenolics of ‘Zonouz’ apple peel with 55.1 and 15% of characterized constituents. Contrarily, phenolcarbonic acids content of ‘Zonouz’ was higher than in ‘Gala’. Chlorogenic acid was the main phenolcarbonic acid constituent of ‘Zonouz’ peel.
